  • 2 cups cooked black beans
  • 13 cup salsa
  • 1 12 cups shredded lettuce
  • 12 cup lowfat shredded cheddar cheese
  • 12 cup cooked brown rice
  • 4 flour tortillas

Directions

    In a medium bowl, combine black beans, cheese, salsa and rice.

    Top each tortilla with 3/4 cup of the black bean mixture and some lettuce.

    Roll up tortillas and slice in half to serve.

    Refrigerate leftovers.
