- 1 lb. black beans
- 1/2 gal. water
- 1 large onion
- 3 green peppers
- 1 clove garlic
- 1/2 c. olive oil
- 1/4 ham bone
- 3 bay leaves
- 1 Tbsp. salt
- 1 oz. white bacon
- 1/2 c. vinegar
Directions

1Wash beans thoroughly and soak overnight in water.

2Use this water for cooking.

3Fry slightly the onion, green pepper and garlic in olive oil.

4Combine all ingredients, except vinegar, which is added a few minutes before beans are ready to serve. Cook with low heat until beans are tender and the liquid is of thick consistency.
