- 1 c. black beans, soaked and drained
- 1 tsp. salt
- 3 c. water
- 2 Tbsp. oil
- 1 medium onion, chopped
- 1 clove garlic, minced
- 1 small green pepper, chopped
- 1 large tomato, chopped
- 1/2 tsp. ground cumin
- 1 Tbsp. lemon juice
Directions

1Cook the soaked beans in water for an hour or until tender. Saute the onion, garlic, pepper and tomato in oil for about 3 minutes.

2Add the sauteed mixture and cumin to the beans; cover and cook on low heat for 20 to 30 minutes.

3Add the lemon juice just before serving over rice.
