  • 1 lb. black beans
  • 2 onions, chopped
  • 1 large green pepper, chopped
  • 2 bay leaves
  • 2 tsp. oregano
  • 1 tsp. vinegar
  • 6 cloves garlic, minced
  • 1/4 c. olive oil
  • salt and pepper

Directions

    Rinse black beans.

    Cover with water and soak overnight.
  3. 3
    Cook black beans in same water about 1 1/2 hours.

    Saute onions, green peppers and garlic in olive oil.

    Add to black beans.

    Add oregano, salt and pepper and bay leaves.

    Cook over low heat for approximately 2 to 2 1/2 hours or until beans are tender and liquid has thickened.

    Add 1 teaspoon vinegar just before serving. Serve over yellow or white rice.
