- 1 lb. black beans
- 2 onions, chopped
- 1 large green pepper, chopped
- 2 bay leaves
- 2 tsp. oregano
- 1 tsp. vinegar
- 6 cloves garlic, minced
- 1/4 c. olive oil
- salt and pepper
Directions

1Rinse black beans.

2Cover with water and soak overnight.

3Cook black beans in same water about 1 1/2 hours.

4Saute onions, green peppers and garlic in olive oil.

5Add to black beans.

6Add oregano, salt and pepper and bay leaves.

7Cook over low heat for approximately 2 to 2 1/2 hours or until beans are tender and liquid has thickened.

8Add 1 teaspoon vinegar just before serving. Serve over yellow or white rice.
