- 1 lb. black beans
- 1 (No. 1) small bottle olive oil
- 5 onions
- 2 green peppers
- 6 slices bacon
- 1 whole garlic
- 1 bay leaf
- 1 peeled apple
- rice (optional)
Directions

1Before cooking, wash beans and soak 4 to 5 hours.

2Water should cover beans by 1 1/2 inches.

3Add 1 tablespoon olive oil, 1 onion and 1 green pepper to beans.

4After soaking, bring beans to boil uncovered.

5When boiling, add bacon.

6Cover and lower to medium heat for 1 hour.

7Add sauce and lower heat to simmer for an additional hour or until slightly thickened.

8Along with sauce add bay leaf, black pepper, 1 tablespoon salt and apple (sliced).
