  • 5 to 8 boneless chicken breasts
  • 1 to 2 cans black beans
  • 1 can chicken broth
  • 6 scallions (white and light)
  • 2 to 4 garlic cloves (I like more)
  • 1 large onion, chopped
  • 2 Tbsp. red wine vinegar
  • 2 to 3 tsp. chili powder
  • white rice, cooked

Directions

    Brown chicken in a little olive oil.

    Saute garlic and onion. Put in all other ingredients.

    Simmer 5 minutes with chicken. Pour over rice.
