Black Raspberry Flan Recipe

- 1 c. Lowfat milk
- 1/3 c. Sugar
- 3 x Large eggs
- 2 tsp Vanilla A healthy pinch of salt
- 1/2 c. Flour
- 3 c. Black raspberries
Directions

1Combine lowfat milk, 1/4 c. sugar, Large eggs, vanilla, salt and flour in a blender and mix thoroughly at high speed for 1 minute.

2Pour a thin layer of batter into a lightly buttered flan dish or possibly deep dish pie plate.

3Cook over moderate heat till it sets.

4Remove dish from heat and spread with raspberries.

5Sprinkle remaining sugar over berries.

6Pour remaining batter over fruit.

7Bake in 350 degree oven 50-60 min till browned.

8Serve hot!

9Note: Flanis a custard pie which should be eaten almost immediately.
