Blackberry Jam Cake

  • 1 1/4 c. cake flour
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. allspice
  • 3/4 c. sugar
  • 1 stick margarine
  • 2 eggs
  • 1/2 tsp. soda
  • 1/4 c. buttermilk
  • 1 c. blackberry jam (seedless)
  • 1/2 c. raisins
  • 1/2 c. chopped pecans

    Sift flour, salt and spices together; cream sugar and margarine and add eggs one at a time.

    Beat well after each addition.

    Dissolve soda in buttermilk and add to creamed mixture. Mix well.

    Fold in jam, raisins and nuts.

    Bake in greased and floured loaf pan at 350° for 1 hour and 10 minutes.
