Ingredients
- 2 c. fresh basil leaves
- 1/2 c. olive oil
- 2 Tbsp. pine nuts
- 2 cloves garlic, lightly crushed
- 1 tsp. salt
- 1/2 c. fresh grated Parmesan cheese
- 2 Tbsp. fresh grated Romano cheese
- 3 Tbsp. butter, softened at room temperature
Directions

1Place basil, olive oil, pine nuts, garlic and salt in a blender.

2Mix at high speed.

3Stop from time to time to scrape sides of blender with rubber spatula.

4When ingredients are evenly blended, pour into a bowl.

5Beat by hand the 2 grated cheeses.

6Add softened butter and mix well.

7Before spooning pesto over pasta, add 1 tablespoon water to the pesto from the water the pasta was cooked in.
