Ingredients

  • 2 c. fresh basil leaves
  • 1/2 c. olive oil
  • 2 Tbsp. pine nuts
  • 2 cloves garlic, lightly crushed
  • 1 tsp. salt
  • 1/2 c. fresh grated Parmesan cheese
  • 2 Tbsp. fresh grated Romano cheese
  • 3 Tbsp. butter, softened at room temperature

Directions

    Place basil, olive oil, pine nuts, garlic and salt in a blender.

    Mix at high speed.

    Stop from time to time to scrape sides of blender with rubber spatula.
  4. 4
    When ingredients are evenly blended, pour into a bowl.

    Beat by hand the 2 grated cheeses.

    Add softened butter and mix well.

    Before spooning pesto over pasta, add 1 tablespoon water to the pesto from the water the pasta was cooked in.
