Ingredients

  • 1 tsp. vegetable oil
  • 1 c. chopped onions
  • 1/2 c. chopped celery
  • 2 tsp. minced garlic
  • 2 c. cooked white beans (cooked without salt)
  • 1 c. finely diced butternut squash
  • 1 c. chopped carrots
  • 1 (13 3/4 or 14 1/2 oz.) can chicken broth
  • 1 c. water
  • 1 (2-inch) strip lemon peel
  • 1/4 tsp. thyme
  • 4 c. shredded cabbage
  • 1 c. (14 or 16 oz.) whole reduced-sodium tomatoes
  • 1 tsp. lemon juice
  • 1/2 c. julienned basil
  • 1 tsp. grated lemon peel

Directions

    Heat oil in saucepan over medium heat.

    Add onions and celery; cover and cook, stirring until tender, 5 minutes.

    Stir in garlic; cook 30 seconds.

    Add beans, squash, carrots, chicken broth, water, lemon peel, pepper and thyme.

    Bring to a boil; reduce heat and boil gently, uncovered, until vegetables are tender, 20 minutes.
