  • 1/2 c. plain flour
  • 1 to 2 Tbsp. sugar
  • 1/4 tsp. salt
  • 1/2 c. milk
  • 1/2 c. yellow cornmeal
  • 2 tsp. baking powder
  • 1 egg, beaten
  • 2 Tbsp. vegetable oil

Directions

    Combine dry ingredients; mix well.

    Add egg, milk and oil; stir until smooth.

    Place in a well-greased cast iron cornstick pan in a 425° oven for 3 minutes; then spoon batter 2/3 full into pans.

    Bake at 425° for 10 to 12 minutes.
