Blueberry Coffee Cake

Ingredients
- 2 c. flour
- 1 c. sugar
- 2 tsp. baking powder
- 1 tsp. salt
- 1 1/2 tsp. grated lemon or orange peel
- 1/2 c. margarine or butter, softened
- 1 c. milk
- 2 eggs, slightly beaten
- 1 tsp. vanilla
- 2 c. fresh blueberries or 2 c. sliced peaches
Directions

1Heat oven to 350°.

2Grease 13 x 9 inch pan.

3Lightly spoon flour into measuring cup, level off.

4In large bowl, combine flour, sugar, baking powder, salt and lemon peel.

5Using pastry blender or fork, cut in margarine until mixture is the consistency of coarse meal.

6Add milk, eggs, and vanilla; stir until well blended.

7Pour 3/4 of batter into prepared pan.

8Top with blueberries.

9Spoon remaining batter over blueberries.

10Bake for 35 to 45 minutes or until toothpick inserted in the center comes out clean.

11Cool 30 minutes.
