  • 2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 1/2 c. (1 stick) margarine or butter, softened
  • 1 1/2 c. sugar
  • 2 eggs
  • 1/3 c. milk
  • 2 tsp. lemon rind
  • 2 c. fresh or frozen blueberries, thawed and drained

    Preheat the oven to 350°.

    In a large bowl, mix together the flour, baking powder, salt and nutmeg; set aside.

    Place the margarine and sugar in another large bowl; beat at medium speed until light and fluffy.

    Add the eggs and beat well.

    Add the flour mixture and milk and beat at low speed until the mixture is smooth.

    Stir in the lemon rind and blueberries.
