  • 1 1/2 c. all-purpose flour
  • 1/2 c. sugar
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 c. milk
  • 1/4 c. vegetable oil
  • 1 c. fresh blueberries or 3/4 c. frozen blueberries

    Combine dry ingredients in mixing bowl.

    Make a well in center of mixture.

    Combine egg, milk and oil; add to dry ingredients, and stir just until moistened.

    Fold in blueberries.

    Fill greased muffin pans two-thirds full.

    Bake at 400° for 20 to 25 minutes. Yields 1 dozen.
