- 1 cup shortening
- 2 cups sugar
- 3 1/2 cups self-rising flour
- 1 1/2 cup milk
- 6 Tbsp. boiling water
- 6 eggs
- 2 tsp. vanilla extract
- 1 tsp. almond extract
- 2 (16 ounce) cans blueberries, drained or
- 2 pints fresh blueberries
Directions

1Cream shortening and sugar. Blend in flour, milk and boiling water and beat for 2 minutes. add eggs, vanilla and almond extract. Beat 2 more minutes. Fold in blueberries and spoon onto greased regular size muffin tins lined with muffin cups. Bake at 375 degrees for 20-25 minutes, If using fresh blueberries, sift small amount of flour over blueberries from settling to bottom. Yields 48 muffins.
