- 4 c. blueberries, rinsed and drained in colander
- 1/4 c. sugar
- 3 Tbsp. cornstarch (I use whole wheat flour)
- 1/8 tsp. salt
- 1/2 c. cold water
- 2 Tbsp. margarine
- 1 tsp. grated lemon rind (optional)
- 1 Tbsp. lemon juice
- 1 baked pie crust (9-inch)
Directions

1Mix the sugar, cornstarch and salt in a saucepan; stir in cold water.

2Add 2 cups of the berries.

3Cook over low heat, stirring constantly until thick.

4Remove from heat.

5Add the margarine, lemon rind and lemon juice and stir. You may taste to adjust to your liking for sweetness.

6Put remaining 2 cups of berries in bottom of pie crust.

7Cover with cooked blueberries.

8Cool. Garnish with whipped topping.

9Very good topped with fresh whipped cream! Contains 289 calories per serving.
