Blueberry Poundcake Squares

  • 1-1/2 cup White Granulated Sugar
  • 1 cup Margarine
  • 4 whole Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 whole Lemons, Zest And Juice
  • 2 cups All-purpose Flour
  • 1 can (21 Oz. Can) Blueberry Pie Filling
  • 1/4 cups Powdered Sugar

Directions

    Preheat oven to 350°F.

    With a mixer, cream together the granulated sugar and margarine until smooth. Add eggs and vanilla until blended well. Grate lemons and set aside. Now mix the juice from the lemons into batter. Then slowly add flour. Once well blended together, pour into a greased 9x12 pan. Take the blueberry pie filling and scoop 2 to 3 tablespoon-sized drops 1 inch apart, approximately 8 pie drops per pan.

    Bake for 30 minutes or until cake has set. Let cool. Sprinkle on lemon zest and powdered sugar.
