- 6 cups fresh blueberries, washed, drained
- 2 tablespoons fresh ginger, minced
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 14 cup sugar
Directions

2In a food processor, place the blueberries and ginger and pulse to coarsely chop.

3Place the contents in a glass bowl and stir in honey, lemon juice, and sugar.

4Cover and let stand for 2 hours.

5The Syrup:.

6In a large saucepan over medium high heat, place the blueberry mixture and bring to a boil.

7Simmer for 5 minutes, stirring constantly.

8Remove from heat and strain into a bowl through cheesecloth or a fine sieve.

9Pour syrup into a pint jar.

10Cover and store in the refrigerator for up to 1 month.
