- 4 c. thinly sliced onions
- 1 clove garlic, finely chopped
- 1/4 c. butter
- 1 (46 oz.) can tomato juice
- 1 c. water
- 2 tsp. beef flavor instant bouillon
- 2 tsp. parsley flakes
- 8 slices French bread, toasted
- 2 c. (8 oz.) shredded Mozzarella cheese
Directions

1In a large kettle, cook onions and garlic in butter until tender.

2Stir in tomato juice, water, bouillon and parsley. Bring to a boil.

3Reduce heat.

4Simmer, uncovered, 20 to 30 minutes, stirring occasionally.
