Ingredients

  • 2 lbs boneless chicken, cut into pieces
  • 2 onions, chopped
  • 2 garlic cloves, crushed
  • Oil, for sauteing
  • 1 12-ou can diced tomatoes
  • 1 c dried apricots, chopped
  • 1/2 c slivered almonds
  • 2 bananas, sliced
  • 1 Granny Smith apple,cored & chopped
  • Handful of dried cranberries (optional)
  • 1 tbsp curry paste

Directions

    Cut chicken into bite-size pieces & saute w/onion & garlic until onion is translucent & chicken is lightly browned. Add remaining ingredients & simmer til cooked, abt 12 min.

    Serve w/couscous (I used whole-wheat)& side dishes of chutney, plain low/nonfat yogurt, & dried coconut (optional).
