- 2 lbs boneless chicken, cut into pieces
- 2 onions, chopped
- 2 garlic cloves, crushed
- Oil, for sauteing
- 1 12-ou can diced tomatoes
- 1 c dried apricots, chopped
- 1/2 c slivered almonds
- 2 bananas, sliced
- 1 Granny Smith apple,cored & chopped
- Handful of dried cranberries (optional)
- 1 tbsp curry paste
Directions

1Cut chicken into bite-size pieces & saute w/onion & garlic until onion is translucent & chicken is lightly browned. Add remaining ingredients & simmer til cooked, abt 12 min.

2Serve w/couscous (I used whole-wheat)& side dishes of chutney, plain low/nonfat yogurt, & dried coconut (optional).
