- 100 grams Cake flour
- 100 grams White sugar
- 1/2 tsp Baking powder
- 2 Eggs
- 3 drops Vanilla extract
- 100 grams Margarine or butter (unsalted)
- 10 Boiled chestnuts
Directions

1Slice the unpeeled boiled chestnuts in half.

2Scoop the insides into a bowl.

3Mash roughly.

4Sift flour into a bowl.

5Add baking powder and sugar, then mix.

6Add beaten eggs and vanilla extract.

7Mix until any flouriness is gone.

8Add melted margarine (or butter) in a few batches.

9Stir thoroughly.

10Add the chestnuts and mix fully.

11Cover with plastic wrap and chill in the fridge for 20 minutes.

12Preheat the oven to 200C/392F.

13Scoop the dough and fill to about 80% of the cupcake liners.

14Bake at 180C/356F for 20 minutes (or until the surface is golden brown).
