Boiled Raisin Cake

  • 1 1/2 C. Raisins
  • 1 1/2 C. Water
  • 3/4 C. Sugar
  • 1/2 C. Butter or Margarine
  • 1 Egg
  • 1 Tsp. Vanilla
  • 1 1/2 C. Flour
  • 1 Tsp. Baking Powder
  • 1 Tsp. Baking Soda
  • Pinch of Salt

Directions

    Boil raisins in water for 20 mins. Save 3/4 cup juice from boiled raisins. Cream together sugar, butter, eggs and vanilla. Sift flour, salt, baking powder and soda. Add to creamed mixture. Next add raisin juice, mix and then add raisins last. Bake at 325 for 45 mins in an 8x8 square pan.
