- fresh beef tongue
- 1 1/2 c. strained stewed tomatoes
- 4 Tbsp. Worcestershire sauce
- 1 can mushrooms
- salt and pepper
- 1/4 c. flour
- 1/4 c. butter
Directions

1Scrub tongue well.

2Cover with boiling water and bring to a boil.

3Skim, cover and simmer until tender, 3 to 4 hours.

4Add 1/2 teaspoon salt per pound when partially cooked.

5Remove skin when tender.

6To 2 cups strained water in which tongue has been boiled, add the rest of the ingredients.

7Blend together to form sauce.

8Place tongue in roasting pan; pour over sauce.

9Cover and bake 30 minutes at 350°, turning often.
