- 1/4 c. butter or oleo
- 2 or 3 tsp. curry powder
- 1/2 c. chopped onion
- 3 Tbsp. all-purpose flour
- 1/4 tsp. salt
- dash of pepper
- 1 1/2 c. chicken broth
- 2 c. diced turkey, cooked
- 1 tsp. shredded lemon peel
- 2/3 c. rice
- 1/4 c. chopped cashews
- 2 Tbsp. chopped pimiento
Directions

1In skillet, melt butter or oleo.

2Add curry powder and heat 2 to 3 minutes.

3Stir in onion; cook until tender.

4Blend in flour, salt and pepper, stirring well.

5Add chicken broth.

6Cook and stir until mixture is bubbly; cook 2 minutes more.

7Add turkey and lemon peel; heat mixture to boiling.
