Bongo Bongo Banana Bread

  • 3/4 c. mashed banana
  • 1/3 c. vegetable oil
  • 2 eggs
  • 1/2 c. unsweetened apple juice concentrate
  • 1 c. flour
  • 1 c. whole wheat flour
  • 1/3 c. wheat germ
  • 1 tsp. baking soda
  • 3 tsp. baking powder
  • 1/2 c. raisins
  • 1/2 tsp. each: cinnamon and nutmeg

    Preheat oven to 325°.

    In a blender jar, combine apple juice concentrate and raisins.

    Puree until raisins are completely chopped.

    Pour this mixture into a large mixing bowl; add the mashed banana, oil and eggs.

    Beat thoroughly.

    Add the flours, wheat germ, baking soda, baking powder and spices.

    Mix thoroughly. Coat a loaf pan with vegetable cooking spray and spoon in the batter, spreading it evenly.

    Bake for approximately 45 minutes, until an inserted knife comes out clean.
