  • 1 c. flour
  • 3/4 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • milk
  • 3 Tbsp. oil
  • 1 egg, separated
  • 1 3/4 tsp. vanilla
  • 1 oz. baking chocolate
  • 1 Tbsp. butter
  • 1 3/4 c. sifted confectioners sugar

Directions

    Combine flour, 1/2 cup sugar, baking powder and salt in bowl; mix well.

    Add 1/4 cup milk, oil, egg yolk and 1 teaspoon vanilla; mix well.

    Beat at medium speed for 1 minute, scraping bowl.

    Add 1/4 cup milk and beat for 1 minute.

    Fold in egg white beaten with 1/4 cup sugar.

    Pour into 9-inch cake pan lined with greased wax paper.

    Bake at 350° for 25 to 30 minutes or until cake tests done. Cool in pan or 10 minutes before removing to wire rack to cool completely.
