  • 2 pounds Boneless Chicken Breasts, Cut Into Bite-Sized Pieces
  • 2 Tablespoons Olive Oil
  • 1/2 cups Finely Chopped Onion
  • 1 clove Garlic, Minced
  • 1/4 teaspoons Freshly Grated Ginger
  • 3/4 teaspoons Crushed Red Pepper Flakes
  • 1/4 cups Unsweetened Apple Juice
  • 13 cups Light Brown Sugar
  • 2 Tablespoons Ketchup
  • 1 Tablespoon Apple Cider Vinegar
  • 1/2 cups Water
  • 13 cups Soy Sauce (I Use Lite Soy Sauce)

Directions

    Heat olive oil in a large skillet.

    Add chicken pieces; cook until lightly browned.

    Remove from pan; set aside.

    Add remaining ingredients to the skillet; heat over medium heat until well mixed and sugar is dissolved.

    Add chicken; bring to a boil.

    Reduce heat; simmer, uncovered, for 20 minutes.

    Serve over rice.
