Ingredients

  • 2 cloves garlic, minced
  • 1/4 c. extra virgin olive oil
  • 3/4 lb. chicken breasts, boned, skinned and cut into strips
  • 2 c. broccoli florets
  • 3/4 c. oil packed sun-dried tomatoes, drained and sliced thin
  • 1 tsp. basil
  • pinch of red pepper flakes
  • salt to taste
  • pepper to taste
  • 1/4 c. white wine
  • 3/4 c. chicken broth
  • 1 to 2 Tbsp. butter
  • 1/2 lb. bow tie pasta, cooked
  • Parmesan cheese, freshly grated (optional)

Directions

    In a skillet or saucepan, saute the garlic in oil until golden. Now add the strips of chicken and saute until cooked.

    Push the chicken to one side of the pan and add the broccoli florets.

    Saute the broccoli until they are crisply tender.

    Now, add the sun-dried tomatoes, the seasonings, white wine and the chicken broth.

    To complete the sauce, add the butter, cover and simmer for 5 minutes over low flame.

    Remove from heat.

    Now add the cooked pasta and toss.

    Serve with grated Parmesan cheese, if desired.

    Serves 4. Recipe can be doubled, if necessary.
