- 1- 1/2 pound Flank Steak (sometimes Labeled Bracciole Meat)
- 6 Tablespoons Parsley Leaves, Roughly Chopped
- 8 cloves Garlic, Minced
- 4 Tablespoons Olive Oil
- 2 teaspoons Salt
- 2 teaspoons Pepper
- 4 Tablespoons Pecorino Romano Cheese, Grated
- 2 quarts Tomato Sauce, Approx.
- 3 Tablespoons Olive Oil
- 1/2 whole Onion, Diced
- 10 cloves Garlic, Minced
- 2 cans Crushed Tomatoes, 28 Oz
- 6 cups Water
- 10 leaves Fresh Basil
- 1 Tablespoon Sea Salt
- 1 Tablespoon Ground Black Pepper

2Lay out the bracciole on wax or parchment paper.

3Pound with a meat mallet.

5Season both sides generously with sea salt and pepper.

8Spread garlic on top of the bracciole evenly across the entire piece.

14Now the tricky part, roll it up tight enough so that it doesnt flop over and fall apart, but loose enough to let the sauce and flavors mix well.

19Heat a Dutch oven on stove top to medium-high heat.

21The inside does not need to be fully cooked, because it will continue to cook in the sauce.

24When fully browned, cover with tomato sauce (see below for recipe if needed) and reduce to medium-low heat and let cook slowly for 2- 2 1/2 hours.

26I used a tomato sauce similar to this one from an earlier post, except I used whole peeled tomatoes and pureed them in a blender and added onions and red wine.

31Heat olive oil in a skillet over medium heat and cook the onions and garlic until golden brown.

32Remove from heat and set aside.

34In a large pot, pour the crushed tomatoes and water into the pot and cook on medium-low heat for one hour.

36Add the cooked garlic and onions to the pot as well as the basil, salt and pepper.
