Braised Beef With Cabbage

- 2 Tbsp. salad oil
- 1 1/2 lb. beef chuck - cut in 1 1/2 inch cubes
- 2 onions thinly sliced
- 1 apple peeled, cored and thinly sliced
- 2 cans (1 lb. each) tomatoes undrained
- 2 tsp. sugar
- 2 tsp. salt
- 1/8 tsp. pepper
- 4 medium potatoes peeled and quartered lengthwise
- 1 head green cabbage (1 1/2 lb.) - wash and cut into 8 wedges
Directions

1Heat oil in large skillet.

2Add beef.

3Brown on all sides and remove.

4Add onions to skillet.

5Cook slowly until brown.

6Add browned beef.

7Stir in 1 cup of water.

8Add apple and tomatoes. Sprinkle sugar, salt and pepper.

9Bring to boiling, reduce heat and simmer covered 2 hrs.

10Add potatoes and cabbage to meat mixture; simmer, covered, 20 minutes longer, or until vegetables are tender. Serves 4.
