Braised Belgian Endive

- 8 each belgian endive medium heads
- 3 tablespoons butter, unsalted
- 2 tablespoons vegetable oil cooking
- 1/2 cup chicken broth low-sodium, or water
- 1/2 teaspoon salt
Directions

1Cut each endive in half lengthwise and set aside.

2Heat the butter and oil in a large skillet over medium heat on the stove.

3Add the endive in one layer and cook until the outer leaves are nicely browned, about 7 minutes.

4Turn endives and brown the other side, about 4 minutes.

5(Do this in two batches, if necessary.)

6Add the broth, sprinkle with salt and cook until the liquid is reduced, about 10 minutes.

7Transfer the endive and its juices to a serving platter.

8Serve immediately.
