Braised Celery

  • 6 lb. batonette celery
  • 4 oz. clarified butter
  • 4 oz. flour
  • 3 lb. chicken stock
  • 2 bay leaves
  • Salt and white pepper, taste

    Saute the celery in the clarified butter.

    Cook for about 2 minutes.

    Dust the celery with the flour.

    Cook for two more minutes.

    Add the cold chicken stock; mix well.

    Add the bay leaves.

    Put a lid on the brazier and bake at 300F for about 20 minutes.

    Add salt and pepper to taste.
