- 6 lb. batonette celery
- 4 oz. clarified butter
- 4 oz. flour
- 3 lb. chicken stock
- 2 bay leaves
- Salt and white pepper, taste
Directions

1Saute the celery in the clarified butter.

2Cook for about 2 minutes.

3Dust the celery with the flour.

4Cook for two more minutes.

5Add the cold chicken stock; mix well.

6Add the bay leaves.

7Put a lid on the brazier and bake at 300F for about 20 minutes.

8Add salt and pepper to taste.
