- 8 heads of medium-size Belgian endive
- Salt and freshly ground white pepper to taste
- 1/4 teaspoon ground cumin
- 1 tablespoon fresh lemon juice
- 1/2 cup water
- 1 tablespoon butter
Directions

1Wash endive and trim the stem ends.

2Put endive in one layer in a saucepan large enough to hold them in one layer.

3Sprinkle endive with salt and pepper, cumin and lemon juice.

4Add water and butter and cover tightly.

5Bring to a boil and simmer for about 25 minutes until water is evaporated.

6Uncover endive and brown lightly on both sides.

7Serve immediately.
