- 2 lb. squash, diced
- 1/4 c. oil
- 1 (8 oz.) can crushed tomatoes
- 3 to 4 onions, chopped
- 2 Tbsp. parsley, chopped
- salt and pepper to taste
Directions

1Saute onions in oil until tender.

2Add squash and stir a few times.

3Add tomatoes, parsley, salt and pepper.

4Cover and simmer. Cooking time is 30 minutes.
