  • 1 tablespoon olive oil
  • 2 12 cups finely chopped leeks, white part only
  • 14 cup white wine
  • 1 teaspoon minced drained capers
  • 14 teaspoon fresh thyme
  • 14 teaspoon salt
  • 14 teaspoon pepper

Directions

    In saucepan over medium low heat, cook leeks in oil, until soft, but not browned, about 12 minutes.

    Add wine and cook until evaporated.

    Remove from heat and stir in capers, thyme, salt and pepper.
