  • 7 15/16 ounces prawns preferably uncooked
  • 4 3/4 tablespoons chicken stock
  • 2 teaspoons dry sherry or rice wine
  • 1/4 teaspoon salt
  • 2 teaspoons sugar
  • 1 teaspoon cider vinegar
  • 2 tablespoons spring onions
  • 2 teaspoons fresh ginger finely chopped
  • 1/2 teaspoon cornflour blended with 1/2 water

Directions

    Peel the prawns and if you are using large uncooked ones cut them to remove the fine digestive cord.

    Wash the prawns and pat them dry with kitchen paper.

    Combine the sauce ingredients in a wok or large frying pan.

    Bring it to a simmer and then add the prawns.

    Braise the prawns slowly over a low heat for 34 minutes.
