- 7 15/16 ounces prawns preferably uncooked
- 4 3/4 tablespoons chicken stock
- 2 teaspoons dry sherry or rice wine
- 1/4 teaspoon salt
- 2 teaspoons sugar
- 1 teaspoon cider vinegar
- 2 tablespoons spring onions
- 2 teaspoons fresh ginger finely chopped
- 1/2 teaspoon cornflour blended with 1/2 water
Directions

1Peel the prawns and if you are using large uncooked ones cut them to remove the fine digestive cord.

2Wash the prawns and pat them dry with kitchen paper.

3Combine the sauce ingredients in a wok or large frying pan.

4Bring it to a simmer and then add the prawns.

5Braise the prawns slowly over a low heat for 34 minutes.
