Ingredients
- 1/4 c. plus 2 Tbsp. all-purpose flour
- 1/2 tsp. pepper
- 8 quail, dressed
- 1/2 c. bacon drippings
- 1 c. milk
- 1 c. chopped onion
- 2 cans cream of celery soup, undiluted
- 1/2 tsp. dried whole caraway seed
- parsley sprigs (optional)
Directions

1Combine flour and pepper.

2Dredge quail in mixture and set aside.

3Melt bacon drippings in Dutch oven.

4Brown quail on both sides.

5Remove quail from Dutch oven and discard any remaining drippings.

6Combine milk and the next three ingredients in a Dutch oven, stirring to mix.

7Add quail.
-
8Cover and cook over low heat, basting frequently, 30 minutes or until done.

9Garnish with parsley, if desired.

10Yields 4 servings.
