Ingredients

  • 1 cup flour
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 1 rabbit, dressed and cut for frying
  • 1 egg, well beaten
  • 1 tablespoon water
  • 1 cup dry breadcrumbs
  • 6 tablespoons lard or 6 tablespoons bacon drippings
  • 1 cup water

Directions

    Combine the flour, salt and pepper.

    Dredge the rabbit pieces in the seasoned flour.

    Combine the egg and 1 T water.
  4. 4
    Dip the rabbit pieces in the egg.

    Coat the pieces well with bread crumbs.

    Brown on all sides in the hot lard or bacon drippings.

    Slowly add 1 c water to the skillet and cover tightly.

    Simmer 1 hour or more until tender.
