- 1 cup flour
- 1 teaspoon salt
- 14 teaspoon pepper
- 1 rabbit, dressed and cut for frying
- 1 egg, well beaten
- 1 tablespoon water
- 1 cup dry breadcrumbs
- 6 tablespoons lard or 6 tablespoons bacon drippings
- 1 cup water
Directions

1Combine the flour, salt and pepper.

2Dredge the rabbit pieces in the seasoned flour.

3Combine the egg and 1 T water.

4Dip the rabbit pieces in the egg.

5Coat the pieces well with bread crumbs.

6Brown on all sides in the hot lard or bacon drippings.

7Slowly add 1 c water to the skillet and cover tightly.

8Simmer 1 hour or more until tender.
