Braised Veal Chops

Ingredients
- 2 veal chops
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/3 c. oil
- 1 onion, chopped
- 3/4 c. sliced carrots
- 1 large can peeled Italian style tomatoes
- 1 can sliced mushrooms or fresh
- 1 chicken bouillon cube
- parsley
Directions

1Rinse and pat dry chops.

2Sprinkle with salt and pepper.

3In a large skillet or Dutch oven heat oil and lightly brown chops on both sides.

4Add carrots, tomatoes and bouillon.

5Simmer 45 minutes, covered.

6Add mushrooms and sprinkle with parsley.

7Cook 5 to 10 more minutes.

8Serve veal covered with sauce and veggies. Serves 2.
