Bran Flake Muffins

- 3 c. bran flakes
- 1 c. boiling water
- 1/2 c. shortening
- 1 1/2 c. sugar
- 2 eggs
- 2 c. buttermilk (regular whole milk can be used)
- 2 1/2 c. flour
- 1 tsp. salt
- 2 1/2 tsp. soda
- 1 tsp. vanilla
Directions

1Pour boiling water over bran flakes and let stand 3 minutes; set aside.

2In separate bowl, combine shortening, sugar and eggs; set aside.

3Sift flour with soda and salt.

4Now, combine all ingredients with buttermilk.

5Bake in greased muffin pan in a preheated 400° oven for 20 minutes.

6Makes about 2 1/2 dozen. Batter may be kept in refrigerator up to 4 weeks.
