Bran Flake Muffins

Ingredients

  • 3 c. bran flakes
  • 1 c. boiling water
  • 1/2 c. shortening
  • 1 1/2 c. sugar
  • 2 eggs
  • 2 c. buttermilk (regular whole milk can be used)
  • 2 1/2 c. flour
  • 1 tsp. salt
  • 2 1/2 tsp. soda
  • 1 tsp. vanilla

Directions

    Pour boiling water over bran flakes and let stand 3 minutes; set aside.

    In separate bowl, combine shortening, sugar and eggs; set aside.

    Sift flour with soda and salt.

    Now, combine all ingredients with buttermilk.

    Bake in greased muffin pan in a preheated 400° oven for 20 minutes.

    Makes about 2 1/2 dozen. Batter may be kept in refrigerator up to 4 weeks.
