- 1 1/2 c. flour
- 2/3 c. firmly packed brown sugar
- 1 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 2 egg whites
- 1 1/2 c. skim milk
- 1/4 c. oil or applesauce
- 3 c. Post Bran flakes
- 1/3 c. raisins or nuts
Directions

1Heat oven to 400°.

2Mix flour, brown sugar, baking soda, cinnamon and salt in large bowl.

3Beat egg whites in a small bowl and stir in milk and oil.

4Add to the flour mixture.

5Stir until mixed (batter will be lumpy).

6Stir in cereal and raisins.

7Spoon batter into greased muffin pan, filling each cup 2/3 full.

8Bake 20 minutes or until golden brown.

9Serve warm.
