- 2 c. boiling water
- 6 c. bran flakes
- 1 1/4 c. butter or margarine
- 3 c. sugar
- 4 eggs
- 1 qt. buttermilk
- 5 c. flour
- 5 tsp. baking soda
- 2 c. chopped dates or raisins (optional)
Directions

1Pour boiling water over bran flakes and let stand.

2In a separate bowl, cream butter and sugar; beat in eggs.

3Stir in buttermilk and the bran flake mixture.

4Sift together flour, salt and baking soda and add to muffin mixture.

5Add dates (or raisins), if desired.

6Spoon into greased muffin tins.

7Bake at 400° for 20 minutes.
