- 1 c. flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 2 dashes salt
- 4 Tbsp. sugar
- 1 tsp. cinnamon
- dash of nutmeg
- 1 large egg, beaten
- 1 c. milk or milk substitute
- 1 c. bran
- 1 Tbsp. vegetable oil (not corn)
Directions

1Preheat oven to 400°.

2Mix flour, baking powder, baking soda, cinnamon and salt in a large bowl.

3Make a well in the center.

4In a different bowl, mix milk or milk substitute with bran.

5Let stand until most of the moisture is absorbed.

6Add oil, sugar and beaten egg to bran mixture and stir until mixed.

7Pour into well-lined muffin cups 2/3 full.

8Bake at 400° for 20 to 25 minutes.
