Ingredients

  • 4 c. bran with raisins flakes
  • 2 1/2 c. flour
  • 1 c. sugar
  • 2 1/2 tsp. soda
  • 1 tsp. salt
  • 1/2 c. nuts
  • 2 c. buttermilk
  • 2 eggs, beaten
  • 1/2 c. liquid shortening

Directions

    In a large bowl stir together, bran flakes, flour, nuts, soda, salt and sugar.

    Make a well in the center.

    In another bowl mix beaten eggs, buttermilk and oil.

    Add to flour mixture stirring just until moistened.

    Batter will be thick.

    Cover and store in refrigerator up to 3 weeks.

    To bake muffins, fill greased cups 3/4 full.

    Bake in a 375° oven for 20 to 25 minutes.

    Makes 3 dozen.
