  • 1/4 c. vegetable shortening
  • 1/4 c. firmly packed brown sugar
  • 2/3 c. milk
  • 1 egg
  • 1/4 c. molasses
  • 1/2 c. wheat flour
  • 1/2 c. white flour
  • 1 c. unprocessed bran (health food store)
  • 1 Tbsp. baking powder
  • 1/4 tsp. salt

Directions

    Heat oven to 400°.

    Generously grease 12 medium muffin cups or line with paper baking cups.

    Beat together shortening and sugar until light and fluffy.

    Add milk, egg, molasses and combined dry ingredients are moistened.

    Fill prepared muffin cups 2/3 full. Bake about 15 minutes or until wooden pick inserted in center comes out clean.

    Makes 1 dozen.
