Ingredients

  • 2 c. boiling water
  • 2 c. 100% bran
  • 3 c. sugar
  • 1 c. shortening
  • 4 eggs
  • 5 c. flour
  • 4 c. 40% bran flakes
  • 5 tsp. soda
  • 1 tsp. salt
  • 1 qt. buttermilk
  • 1 Tbsp. nutmeg
  • 1 Tbsp. ginger
  • 1 Tbsp. cinnamon

Directions

    Pour boiling water over 100% bran and cool.

    Cream sugar and shortening.

    Mix bran into eggs.

    Add flour, 40% bran flakes, soda, salt, buttermilk, nutmeg, ginger and cinnamon.

    Refrigerate up to 30 days.

    Bake in greased muffin tins 25 to 30 minutes at 375° to 400°.
