- 2 cups wheat all-bran cereal
- 1 14 cups skim milk
- 13 cup brown sugar
- 1 cup all-purpose flour
- 1 12 teaspoons baking powder
- 12 teaspoon baking soda
- 12 teaspoon cinnamon
- 1 egg
- 12 cup applesauce

1Heat oven to 400.

2Grease bottoms of 12 medium muffin pans.

3In a bowl place cereal, milk, and brown sugar.

4Stir to combine and let stand 5 minutes.

5In another bowl, place flour, baking powder, baking soda, and cinnamon.

6Stir to combine and set aside.

7Add egg and applesauce to cereal.

9Add bran mixture to flour mixture.

10Stir until just moistened; batter will be lumpy.

11Divide among muffin cups, filling each about 2/3 full.

12Bake 20 minutes, until firm to touch.

13Whole Wheat Bran Muffins: Substitute 1 cup whole wheat flour (use whole wheat flour for all the recipes if wanted).
