  • 1 c. all-purpose flour
  • 1 Tbsp. baking powder
  • 1/4 c. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 c. Kellogg's Bran Flakes cereal
  • 2/3 c. skim milk
  • 2/3 c. mashed, ripe bananas
  • 2 egg whites
  • 1/4 c. Promise spread, melted
  • 1/2 c. raisins

Directions

    Stir together flour, baking powder, sugar, salt and spices. Set aside.

    Stir together cereal, milk and bananas in mixing bowl. Let stand 1 to 2 minutes or until cereal is softened.

    Beat egg whites until foamy.

    Add egg whites and Promise spread to cereal mixture.

    Beat well.

    Add flour mixture; stir in raisins, stirring only until combined.

    Portion batter evenly into 12 greased 2 1/2-inch muffin pan cups.

    Bake at 400° for about 25 minutes or until lightly browned.
