Bread Pudding

  • 1/4 c. sugar
  • 1/8 tsp. cinnamon
  • 3 1/2 c. iced raisin bread, cubed (5 to 6 slices)
  • 5 eggs
  • 1/2 c. sugar
  • 1 tsp. vanilla
  • 2 c. milk
  • 4 Tbsp. butter

    Combine the 1/4 cup sugar, cinnamon and bread cubes in microwavable 1 1/2-quart dish or casserole.

    In medium mixing bowl, blend eggs, 1/2 cup sugar and vanilla.

    Set both of these aside.

    In microwavable measuring cup, combine milk and butter and microwave on High 4 to 6 minutes until scalding.

    Pour slowly, stirring into the egg mixture, then pour all over the bread cubes. Cover dish with wax paper.

    Microwave on Medium for 15 to 17 minutes.

    Every 5 minutes push the edges to center with spatula. Let it stand for 10 to 15 minutes.

    Can be topped with whipped cream or lemon sauce.
