Bread Salad....Panzanella

Ingredients

  • 5 Cups 1 inch thick bread cubes preferably homemade*
  • 1/2 cup olive oil
  • 1/2 cup red wine vinegar
  • 1/2 cup parmesan cheese
  • Lots of garlic sliced (at least 4 cloves)
  • 1 lg. red onion thinly sliced
  • Kalamata olives about a cup or more
  • Fresh Basil chopped about a cup
  • Best tomatoes-heirloom or fresh grown about3 cups of more chopped in good bit size pieces.
  • salt & pepper to taste

Directions

    Mix all ingredients together except for the bread. Just before serving add in the bread and to toss to absorb the liquids, salt & peeper and serve.

    * bread cubes should be toasted. coat pieces with a little olive oil and spread out on a cookie sheet and toast in 400 degree oven until golden brown, when cool add to salad.
